Ingredients
- 1 cup long grain white rice
- 2 tablespoons vegetable oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 ½ cups chicken broth
- 1 cup tomato sauce
- ½ teaspoon cumin
- Salt to taste
- Fresh chopped cilantro (optional)
Directions
- Heat the oil in a large skillet over medium heat. Add the rice and cook, stirring often, until lightly golden (about 5 minutes).
- Add the onion and garlic. Cook for another 2 minutes until softened and fragrant.
- Pour in the chicken broth and tomato sauce. Add cumin and salt to taste. Stir to combine.
- Bring to a boil, then reduce heat to low and cover. Simmer for 20–25 minutes or until rice is tender and liquid is absorbed.
- Remove from heat and let sit covered for 5 minutes. Fluff with a fork and garnish with cilantro if desired.
